How do I change the email address for the administrator of my subscription

The email address for the administrator is going to become inactive and we need to replace it with a new email address. We also need to update the address associated with other subscribers without our family plan.

While you can add an alias and use it for sign-in, you can't actually change the underlying e-mail address used with the account. In theory, you can ask Microsoft support to move the subscription to another e-mail, but it might be easier, and especially quicker, to cancel the current subscription and order a new one using the correct e-mail.
