Is Apple more reliable with old programs or do they also trash your years of work like Microsoft is doing with Publisher?

I have been using Publisher for years, and now they want to shit can all my work. I agreed to pay yearly for Windows 365, and they have taken a lot of money from me. Can I get my money back? All the programs I have and adjust as needed for mostly charity work really upsets me. PDFs won't work because they cannot be changed. Word rearranges my photos every time I make a change. I have brochures and oversized pictures in Publisher. Why can't they sell me an offline version for my publisher documents that requires no codes? I thought I had bought an older offline version, but Microsoft would not allow it to work on my Windows 11, and at the same time, I was using the 365 version. I am mad and want to know if Apple does the same thing or if I could switch. Is there another company I could use?

    The free Libra Office can read/create MS Office data files.

    All software developers/providors amend there offerings from time to time and can stop offering/supporting a product.
